  • 2 cups Butternut squash, cubed (peeled and seeded)
  • 2 cups Fresh spinach (washed and chopped)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 cup Heavy cream
  • 1 cup Vegetable broth
  • 1 cup Parmesan cheese, grated plus more for serving
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried thyme

Method
 

  1. Preheat the oven and roast butternut squash cubes until tender.
  2. Cook the orzo pasta according to package instructions.
  3. In a pan, heat olive oil and sauté minced garlic until fragrant.

  5. Stir in vegetable broth, heavy cream, and season with salt, black pepper, and dried thyme.
  6. Add chopped spinach and grated Parmesan cheese, mixing until well combined.
  7. Serve with additional Parmesan cheese on top.
