Ingredients
  

Vegetables
  • 4 cups fresh corn kernels or canned corn
  • 2 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup celery chopped
  • 1 cup carrots chopped
Liquids
  • 4 cups vegetable broth
  • 1 cup heavy cream or milk for a lighter version
Seasonings
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme dried
  • to taste salt
  • to taste black pepper
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 cup bacon cooked and crumbled (optional)

Method
 

Prepare the Vegetables
  1. In a large pot, heat a little oil over medium heat. Add the onion, garlic, celery, and carrots. Sauté until softened, about 5 minutes.
  2. Add the diced potatoes and corn to the pot, stirring to combine.
Cook the Chowder
  1. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the potatoes are tender.
  2. Using a blender, puree about half of the chowder to create a creamy texture, then return it to the pot.
  3. Stir in the heavy cream, smoked paprika, thyme, salt, and pepper. Heat through for another 5 minutes.
Serve
  1. Ladle the chowder into bowls and garnish with fresh parsley and crumbled bacon if desired.

Notes

For a vegetarian version, omit the bacon and use vegetable broth.
