Ingredients
  

Vegetables
  • 1 medium onion diced
  • 2 stalks celery diced
  • 2 medium potatoes peeled and diced
  • 4 cups corn fresh or frozen
Liquids
  • 4 cups vegetable broth
  • 1 cup heavy cream
Seasonings
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon thyme dried
  • 1 teaspoon paprika
Garnish
  • 1/4 cup chives chopped

Method
 

Prepare the Vegetables
  1. In a large pot, sauté the diced onion and celery over medium heat until softened, about 5 minutes.
  2. Add the diced potatoes and corn, stirring to combine.
Cook the Chowder
  1. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
  2. Using a blender, puree a portion of the chowder to create a creamy texture, then return it to the pot.
Finish the Chowder
  1. Stir in the heavy cream, salt, pepper, thyme, and paprika. Cook for an additional 5 minutes.
  2. Serve hot, garnished with chopped chives.
