Ingredients
  

Base Ingredients
  • 2 cans full-fat coconut milk Chilled
  • 3/4 cup granulated sugar Adjust to taste
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Optional Mix-ins
  • 1/2 cup shredded coconut Toasted for extra flavor
  • 1/2 cup chocolate chips Dairy-free if desired

Method
 

Prepare the Base
  1. In a mixing bowl, combine the chilled coconut milk, sugar, vanilla extract, and salt. Whisk until the sugar is fully dissolved.
Chill the Mixture
  1. Cover the bowl and refrigerate the mixture for at least 2 hours, or until thoroughly chilled.
Churn the Ice Cream
  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Add Mix-ins
  1. If using, add the shredded coconut and/or chocolate chips during the last few minutes of churning.
Freeze
  1. Transfer the ice cream to an airtight container and freeze for at least 2 hours to firm up.
Serve
  1. Scoop the ice cream into bowls and enjoy!
