Ingredients
  

Vegetables
  • 2 cups corn kernels fresh or frozen
  • 1 medium red onion finely chopped
  • 1 medium red bell pepper finely chopped
  • 1 medium jalapeño seeded and minced
  • 1 cup cilantro chopped
Seasoning
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon chipotle in adobo minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. In a mixing bowl, combine the corn, red onion, red bell pepper, jalapeño, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, minced chipotle, salt, and black pepper.
  3. Pour the dressing over the corn mixture and toss until well combined.
  4. Taste and adjust seasoning if necessary.
  5. Serve immediately or refrigerate for up to 2 hours to allow flavors to meld.
