Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts cooked and shredded
  • 4 cups chicken broth
Vegetables
  • 1 cup onion diced
  • 1 cup bell pepper diced
  • 1 cup corn canned or frozen
  • 1 cup black beans canned, rinsed and drained
Sauces and Spices
  • 2 cups enchilada sauce store-bought or homemade
  • 1 tbsp cumin ground
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Toppings
  • 1 cup cheddar cheese shredded
  • 1/2 cup sour cream
  • 1/4 cup cilantro chopped

Method
 

Prepare the Soup
  1. In a large pot, heat a little oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the shredded chicken, chicken broth, enchilada sauce, corn, black beans, cumin, chili powder, garlic powder, salt, and pepper. Stir to combine.
  3. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes to allow flavors to meld.
Serve
  1. Ladle the soup into bowls and top with shredded cheese, a dollop of sour cream, and chopped cilantro.
