Ingredients
  

Brisket
  • 2 pounds beef brisket trimmed
  • 1 tablespoon olive oil for searing
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 cup beef broth
  • 1 medium onion sliced
  • 3 cloves garlic minced
Taco Assembly
  • 8 small corn tortillas warmed
  • 1 cup fresh cilantro chopped
  • 1 cup red onion diced
  • 1 cup lime wedges
  • 1 cup sour cream for topping

Method
 

Prepare the Brisket
  1. Season the brisket with salt, pepper, chili powder, and cumin.
  2. Heat olive oil in a skillet over medium-high heat and sear the brisket on all sides until browned.
  3. Place the seared brisket in a slow cooker with sliced onion, minced garlic, and beef broth.
  4. Cook on low for 8 hours or until the brisket is tender and easily shredded.
Assemble the Tacos
  1. Once the brisket is cooked, remove it from the slow cooker and shred it using two forks.
  2. Warm the corn tortillas in a skillet or microwave.
  3. Fill each tortilla with shredded brisket, and top with cilantro, diced red onion, and a dollop of sour cream.
  4. Serve with lime wedges on the side.
