Ingredients
  

Beef
  • 1 pound flank steak sliced into thin strips
Vegetables
  • 1 medium bell pepper sliced
  • 1 medium onion sliced
Marinade
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tortillas
  • 8 small flour tortillas
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup guacamole

Method
 

Prepare the Marinade
  1. In a bowl, mix together olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper.
Marinate the Beef
  1. Add the sliced flank steak to the marinade, ensuring all pieces are well coated. Let it marinate for at least 15 minutes.
Cook the Beef and Vegetables
  1. Heat a skillet over medium-high heat. Add the marinated beef and cook for about 5-7 minutes until browned.
  2. Add the sliced bell pepper and onion to the skillet and cook for an additional 5 minutes until the vegetables are tender.
Serve
  1. Warm the flour tortillas in a separate skillet or microwave. Serve the beef and vegetable mixture in the tortillas with your choice of toppings.
