Base Ingredients
  • 4 medium ripe bananas peeled and sliced
  • 1 tablespoon lemon juice to prevent browning
  • 1 cup coconut milk or any milk of choice
  • 2 tablespoons honey or maple syrup for vegan option
Optional Add-ins
  • 1/2 cup chocolate chips for chocolate banana ice cream
  • 1/4 cup peanut butter for a nutty flavor

Method
 

Preparation
  1. In a blender, combine the sliced bananas and lemon juice. Blend until smooth.
  2. Add the coconut milk and honey. Blend again until fully combined and creamy.
  3. If using, add chocolate chips or peanut butter and pulse a few times to mix.
  4. Pour the mixture into a freezer-safe container and spread evenly.
  5. Cover and freeze for at least 4 hours or until solid.
Serving
  1. Remove the banana ice cream from the freezer and let it sit for a few minutes to soften before scooping.
  2. Scoop into bowls and enjoy!
