Avocado Salsa Ingredients
  • 2 pieces avocado diced
  • 1/4 cup red onion diced
  • 1 piece jalapeno finely diced
  • 1 tablespoon cilantro chopped
  • 1 tablespoon lime juice
  • salt to taste
  • 1 cup cucumber diced
  • 1/4 cup green onion diced
  • 1 tablespoon parsley chopped
  • 1 tablespoon lemon juice
  • salt to taste

Method
 

Cooking Instructions
  1. Preheat the oven and prepare a baking dish.
  2. Rub the salmon pieces with oil and cajun seasoning.
  3. Place the salmon in the baking dish and bake in the oven.
  4. While the salmon is baking, prepare the avocado salsa by combining diced avocado, red onion, jalapeno, cilantro, lime juice, cucumber, green onion, parsley, and lemon juice in a bowl.
  5. Season the salsa with salt to taste.
  6. Once the salmon is cooked, serve with avocado salsa on top.
