Ingredients
  

Vegetables
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 medium butternut squash peeled and cubed
  • 4 cups vegetable broth low sodium
  • 1 teaspoon thyme dried
  • 1 teaspoon sage dried
  • 1 cup kale chopped
  • 1 cup canned white beans rinsed and drained

Method
 

Cooking the Soup
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the butternut squash, vegetable broth, thyme, and sage. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the squash is tender.
  4. Add the chopped kale and white beans. Cook for an additional 5 minutes.
  5. Use an immersion blender to puree the soup to your desired consistency, or carefully transfer to a blender in batches.
  6. Season with salt and pepper to taste before serving.
