Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup red bell pepper thinly sliced
  • 1/2 cup green onions sliced
  • 1/4 cup cilantro chopped
Dressing
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup for vegan
  • 1 teaspoon ginger freshly grated
  • 1 clove garlic minced

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, and cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until everything is evenly coated. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
