Ingredients
  

  • 3/4 cup crisp, sweet apple, cut into small bite-size pieces
  • 3/4 tsp ground cinnamon
  • 1 Tbsp maple syrup (for cooking apples)
  • 1/2 - 1 Tbsp maple syrup (for oat mixture)
  • 1/2 tsp ground cinnamon (for oat mixture)
  • 1 pinch sea salt
  • 3/4 cup unsweetened plain almond milk
  • 1 tsp vanilla extract
  • 1 Tbsp chia seeds
  • 2 Tbsp creamy unsalted cashew or almond butter
  • 1/2 cup rolled oats

Method
 

  1. In a saucepan, combine the chopped apples, 1 Tbsp maple syrup, and 3/4 tsp ground cinnamon. Cook over medium heat until the apples are soft, about 15 minutes.
  2. In a bowl, mix the rolled oats, 1/2 - 1 Tbsp maple syrup, 1/2 tsp ground cinnamon, a pinch of sea salt, almond milk, vanilla extract, and chia seeds.
  3. Layer the oat mixture with the cooked apples in jars.
  4. Top with cashew or almond butter.
  5. Refrigerate overnight before serving.
